Pulses and paneer Traditionally, this dish would be made with a few large slabs of golden butter, but for the sake of decency I’ve toned things down a bit. It’s still an extravagant dish, but channel India and enjoy yourself. Drain the rice and cook in a pan of boiling, salted water with the cardamom and bay leaf for 6-8 minutes until al dente, then drain well and mix with the dal.
